The Wonder Soup

This is really special soup, homemade remedy and here is why:Works wonders anytime you feel low, sluggish, when you might be catching something (colds, flu..)
also helps to clean your system when you need to get back on track after your eating “sins.” I swear by it!
It doesn’t look too colorful, just a green mush, but don’t that to deter you, it has very subtle flavor and
could be even enjoyed, regardless its appearance and no salt. Keep it in fridge and if you had perhaps “demanding”
night you can eat it even for breakfast…

What you need:

1 qt. water
1 lb. string beans, strings removed
2-3 celery stalks, strings removed. chopped
1 bunch parsley, stems removed, chopped
3-4 zucchini, chopped

In a deep saucepan, bring a quart of water to boil.
Place string beans, celery and parsley in water and let boil for 5 minutes.
Add the zucchini and continue boiling for another 3-4 minutes.
Remove vegetables from water with slotted spoon (save the water).
Puree them in a blender. Use the cooking water to thin the puree to
the desired thickness. The consistency of pea soup is usually the best.
The best way to get rid of any remaining strings from the celery is to
first Puree, the Grind, and then finally Blend in a Blender.
